Torani's team of Market Insights and Flavor Experts spends hours reviewing global insights, trends and potential concepts for Torani's Pourcast Flavor of 2023. At one point, the list exceeds 100 potential flavors and the team must carefully review data and insights in order to narrow it down to the top 20 flavors to track throughout the year.

February 2022: Gold Standard Tasting

As the Torani team narrows down the list of contenders for Flavor of the Year, its panel of flavor scientists hosts a series of Gold Standard tastings in which they source and taste test a variety of products for each potential flavor. These samples come from a wide range of local and import markets, produce stands, bakeries and online shops, and the tasting team works diligently to identify the target flavor nuances for each potential option. These flavor targets become Torani's "Gold Standard" and the roadmap for the flavor scientists during the months of development ahead.

March - May 2022: Flavor Formulation

As the team narrows down the list of Flavor of Year contenders to just six options, Torani's flavor scientists begin the development process and start formulating amazing flavors, creating a perfect match for each of their Gold Standard flavor targets. While some flavors are easier to match than others, the team eventually formulates each of the potential flavor options.

May - June 2022: Prototype Tasting

As Torani's flavor scientists continue to refine their prototypes, the broader team gathers several times each week to taste and evaluate the flavor prototypes and offer feedback. It is a long and rigorous, though also delicious, process and team members consider flavor, color, mouthfeel and aroma at each stage. As prototypes get closer and closer to the Gold Standard targets, tastings included tastings in a variety of beverage applications including cold brews, milkshakes, boba teas, sodas, matcha tea lattes, and more.

August - September 2022: Marketing & Design

After narrowing it down to just two options for Flavor of the Year, the marketing team's work begins behind the scenes, creating label designs, planning photoshoots and ideating launch plans. Both Flavor of the Year contenders have code names used in all meetings and communications to ensure the flavor is kept top secret until the big reveal.

August - December 2022: Production & Shipping

The top two Flavor of the Year contenders move into trial production in manufacturing. This important step ensures that the product delivers the exact same flavor profiles as the prototypes when produced on a larger scale, and Torani's quality assurance team uses the samples for an assortment of tests from sensory to shelf-life. Meanwhile, Torani's market insights team observes continued growth and consumer interest in Toasted Black Sesame as a flavor, leading them to select this choice for the 2023 Flavor of the Year. Full scale production takes place in November and by early December, the Torani warehouse is filled with cases ready to ship.
